Violet Jelly

2 c of fresh violets

2 c of water

1/4 c of lemon juice

4 c of sugar

3 oz of liquid pectin

Stainless steel 2 qt pan

Wash the flowers and drain and place in a bowl ( I use a jar so I can cover it)

Pour boiling water over the peatals and let them steep for 4- 24 hours ( If you are using a glass container, put metal knife, spoon, etc in the bowl to absorb the heat and the glass will not break)

Strain, save the liquid.  If you don’t have time to make the jelly, you can store it in the fridge for a day.

Place jars in a pot and cover them with water, bring to a boil and then turn down the heat, keep them hot!

Making the Jelly:

Stir the lemon juice and sugar into the violet infusion.

Bring to a rolling boil.

Add the pectin and continue to boil 2 minutes, skim any foam off.

Quickly into the jars leaving 1/8 ” at the top.

Clean the top of the jar.

Put the lids on and turn upside down. Leave for at least 10 minutes and the jars will be sealed.
