Violet Jelly

2 c of fresh violets

2 c of water

1/4 c of lemon juice

4 c of sugar

3 oz of liquid pectin

Stainless steel 2 qt pan

Wash the flowers and drain and place in a bowl ( I use a jar so I can cover it)

Pour boiling water over the peatals and let them steep for 4- 24 hours ( If you are using a glass container, put metal knife, spoon, etc in the bowl to absorb the heat and the glass will not break)

Strain, save the liquid.  If you don’t have time to make the jelly, you can store it in the fridge for a day.

Place jars in a pot and cover them with water, bring to a boil and then turn down the heat, keep them hot!

Making the Jelly:

Stir the lemon juice and sugar into the violet infusion.

Bring to a rolling boil.

Add the pectin and continue to boil 2 minutes, skim any foam off.

Quickly into the jars leaving 1/8 ” at the top.

Clean the top of the jar.

Put the lids on and turn upside down. Leave for at least 10 minutes and the jars will be sealed.



Sumac “lemonade”

It’s not lemonade but when you taste it that’s what you think of. The sumac has a light raspberry-ish taste and there is something to it that makes you think lemonade.

Collect the Sumac berries when they are red and ripe. I live in central Pa and that is usually but mid to the end of July. If the Sumac stains your fingers when you squash the berries, they are ready.  If you pick them too soon, your tea will be bitter. I say tea, because you make it it in same way, except with cold water. It really is closer to an infusion. But it tastes like more of a juice.

7/8 clusters of berries.

pour cold water over them

let it sit for a few hours

DO NOT forget to strain the “hairs” from the sumac out of your tea.

sweeten to taste (or not)

When your sumac tea is done it will be a pinkish color.
